I’m nuts about nut butter and with lots of FODMAP friendly versions out there it means the variations for this recipe are endless! I even purchased an Argan nut butter while I was recently in Morocco. It’s fabulously nutty and like other nut butters its all natural and no added nasties to upset my stomach!
Peanut, Almond, Walnut or even Argan nut butter. You name it, I probably have it in the pantry! I just rearranged my pantry yesterday actually, trying to put everything into some sort of order. I’m one of those people that has most ingredients in the pantry and the fresh produce I buy on a week to week basis determines what I will be cooking! I’m not a big fan of prepackaged products either, especially when they are full of preservatives, artificial colours and flavours that might upset my stomach. An added bonus of having lots of ingredients in the cupboard is that I can whip up a yummy and relatively healthy snack like this one in no time!

4 cups popped popcorn (I used pre-popped to save time)
1/3 cup pure maple syrup
3 tbsp water
1/3 cup nut butter
pinch of sea salt
1. Place the popped popcorn in a large bowl ready for its delicious flavouring!
2. In a small saucepan place together the maple syrup and water then bring to the boil over a medium heat. Once at boiling point, remove from the heat .
3. Add the nut butter of your choice and the salt. Mix all ingredients together until combined then place back on the heat, bringing back to a simmer.
4. Once the mixture has returned to a simmer immediately pour over the popcorn and stir through to coat thoroughly and enjoy!
