I’m very excited that the blog of ‘The Fructose Friendly Chef’ has launched and I can’t wait to hear what you all think!! The Fructose Friendly Chef started just over a year ago with an Instagram account and has grown from there. The blog is going to be an easier way for me to share recipes with you all, I also plan to review products and places to eat out as they can be sometimes hard to come by. I must say a massive thankyou to my talented friend Nerida at Flying Pig Design who helped me with the setup and design of the blog! Another thankyou to my sister Kayla for helping me with the photos for the ‘About Me’ section, to find out more about me and my story head over and check it out. Finally a big thank you to all my followers who have supported me on Instagram and Facebook, you have all inspired me to take the next step in building this blog. If you’re looking for a quick and easy mid-week recipe then this pasta dish might just be this might be the one for you! It’s so easy, I have even been able to teach my boyfriend to whip this one up when it’s his turn to cook dinner and he isn’t doing his specialty (roast lamb, another favourite of mine!). It’s also a good one to pass onto family or friends who might be worried about what to cook for you if they are having you for over dinner. It’s even delicious done with gluten free pasta!

So this recipe I had passed onto my by a family friend after a recent holiday, and of course I had to make a few little adjustments to make it fructose friendly, but I’m starting to become a master at that now!

I am a HUGE fan of summer! I love the warmer weather and would much rather a 40˚C day than a rainy, freezing cold winter’s day. I can’t think of anything better than spending a day out at the beach in the sun and then cooking up a BBQ and enjoying a warm evening outside. Throw together summer meals are also so easy and cooking a BBQ is very social. Whip up a salad or two and there you have dinner!
